These Avocado Grilled Cauliflower Sandwiches Will Make You Forget Grilled Cheese
- Parchment paper
- Baking sheet
- Mixing bowl
- 4 cups cauliflower rice
- ½ t sea salt
- 2 pasture-raised eggs
- ⅓ cup almond flour
- ¼ teaspoon black pepper
- 1 teaspoon ghee
- 2 ripe avocados, mashed
In a mixing bowl, combine mashed cauliflower and some sea salt. Leave the mixture for 20 minutes so that the moisture draws out. Then, with a clean kitchen towel, wring out the cauliflower as firm as you can so that it becomes as dry as possible so that the bread does not become soggy.
Then, put the cauliflower in the mixing bowl again and add the almond flour, a dash of black pepper, and almond flour and combine everything well to get a slightly moist texture. Scoop one cup of the mixture at a time and put it into a parchment paper previously placed in a baking sheet. With the hands, shape the mixture into 4 squares by pressing onto the tops and sides with the fingers. Bake them in preheated oven to 400 degrees Fahrenheit for 25 minutes and then take them out and leave them to cool down for 5 minutes. Now you have your fresh, homemade cauliflower bread ready for avocado sandwiches.
Making the Sandwiches
Grease a pan or a cast iron skillet with ghee and bring it on medium heat. Once it heats, place one slice of cauliflower bread with mashed avocado on top and then put another slice of bread. Grill the sandwich for 3 minutes on each side. Do the same with the other slices and serve while warm. Enjoy!
