You will need:

4 pounds of beef marrow and knuckle bones

2 pounds of meaty bones like short ribs

½ cup of raw ACV

4 quarts of water

3 celery stalks cut in halves

3 onions, quartered

3 carrots, halved

A handful of parsley

Sea salt to taste

Preparation:

Put the bones in a pot and add the ACV and water and leave it for an hour in order for the vinegar to pull the mineral from the bones. Then, add the veggies and bring the pot to boil. While it boils, skim the scum from the top and throw it out. Lower to low-heat and cover the content. Cook it for 24 to 72 hours. In the last 10 minutes, add the parsley. Turn off the heat and leave it to cool down and then strain it. Sprinkle sea salt and your broth is ready for consumption.

You can store it in the fridge for up to a week or in the freezer up to 6 months.
