Cauliflower, Coconut Oil, Ginger, and Turmeric Stew- Simply Amazing!

What is great about autumn and winter is how much we enjoy eating warm and comforting foods, especially stews and soups. Their soothing and warming effect is what everyone looks for during cold days, right? With this in mind, we decided to share a recipe for the tastiest stew ever! It has cauliflower, coconut oil, turmeric, and so many other, exceptionally healthy and easily affordable ingredients. You will love it!
Cauliflower, Ginger, and Turmeric Stew
This colorful and flavorful stew is perfect for everyone, both for people who consume meat, but for vegetarians and vegans as well. Its warmness is perfect for the entire family and it makes a great dinner dish. For additional protein, you can add chicken meat or tofu, the choice is yours. Combining it with wild rice is also a great option. You are probably impatient to see the recipe, so, here it is!
The Recipe
You will need:
A tsp of cumin seeds
3 tomatoes, chopped
1 jalapeno, stemmed and chopped finely
2 tsp of ginger paste
A tbsp of coriander powder
A can of full-fat, unsweetened coconut milk
2 tbsp of cilantro, cleaved
2 tbsp of coconut oil
A medium-sized onion, chopped
A medium cauliflower head, stemmed and cut into florets
One small container of chopped kale
A tbsp of cumin powder
A tsp of turmeric powder
A tsp of sea salt
Preparation:
First, you need to warm the coconut oil for 30 seconds at medium heat. Then, add the cumin seeds and stir until the content begins to sputter. When this happens, add the onions and cook the mixture for one more minute and then add the tomatoes and cook until the tomatoes soften. Then, add the remaining ingredients and cover the pot. Leave it to simmer for 15 minutes on low heat and then remove it from the stove.
Transfer the soup into proper plates and enjoy!
