Healthy Vegan & Gluten-Free Pancakes Recipe
You’ll need:
A medium cup rolled oats
¾ cup of plant milk (almond, rice, etc.)
A medium-sized ripe banana
1 tsp of baking powder
1 tbsp of olive oil
A tsp of vanilla essence or maple syrup
Prep:
Blend the ingredients in a blender until they become smooth. If it’s too thick, add more milk. If it’s too thin, add more oat flour or a tbsp of flaxseed.
Leave it to sit for a while. In the meantime, put the pancake non-stick pan on high-medium heat and spray it with olive oil and then lower it to medium-low when it begins to sizzle.
Then, using a spoon, transfer the mixture from the blender into the pan in mini circle form.
Flip it on the other side when you see bubbles forming on top. Wait for it to be golden brown before removing.
Repeat until you’re out of pancake mixture.
