Anti-Inflammatory Coconut & Sweet Potato Muffins with Ginger, Cinnamon & Maple Syrup

But, they are also beneficial for people who want to lead a healthier diet and are in need of a colorful and interesting, yet simple-to-make recipes.

Recipe for Muffins with Sweet Potatoes & Coconut

To make these mouth-watering muffins, you will need the following ingredients:

1 sweet potato, roasted

3 eggs, beaten lightly

¾ cup of coconut milk

2 tbsp of extra virgin olive oil

½ cup of maple syrup

1 cup of brown rice flour

¼ cup of coconut flour

A tbsp of baking powder

½ tsp of Himalayan salt

A tbsp of cinnamon powder

A tsp of ginger powder

1/8 tsp of cloves, grounded

1/8 tsp of nutmeg, ground

Preparation: First, preheat the oven to 400 degrees Fahrenheit and oil a muffin tray. Then, mash the roasted potato and add it in a bowl (remove the skin first) together with the milk, eggs, oil, and syrup. Mix the ingredients until homogeneous. In another bowl, combine the dry ingredients and then add them to the potato mixture. Combine everything together and fill the pain with the batter; each tin should be 2/3 fill. Put the tray in the oven and bake for 35 minutes on the middle rack. Serve warm and enjoy!
