Healthiest Banana Cake Recipe
You will need:
4 eggs
4 ripe bananas, peeled and smashed
1 ¾ cups of almond flour
¼ cup of coconut oil, liquid
3 tbsp of maple syrup
A tsp of vanilla extract
A tsp of baking powder
A tsp of baking soda
For the coconut frosting:
A 14 ounce can of coconut cream
2 tbsp of maple syrup
2 bowls
An electric mixer
A frosting spatula
9-inch cake pan
Pistachios, chopped (optional)
Dark chocolate, melted (optional)
Preparation: First, preheat the oven to 350 degrees Fahrenheit. In the meantime, beat the eggs and mix them together with the bananas, coconut oil, maple syrup, and vanilla extract to get a fluffy texture. In another bowl, combine the baking powder, baking soda, and almond flour. Then, add it to the previous bowl. Afterwards, grease a 9-inch cake pan with coconut oil and add the mixture. Spread it evenly and bake it for 45 minutes.
While the cake is being baked, whip the maple syrup and coconut cream with an electric mixer. Once you get a homogeneous mixture, turn off the mixer and put the frosting in the fridge. Before using the frosting, you need to wait for the cake to completely cool down. Use a frosting spatula to evenly apply the frosting over the cake.
