Yes, of course we know ice cream is one of the most popular desserts for hot summer days, but there are those who eat it throughout the whole year. Despite the low temperatures outside, you can enjoy your portion of ice cream indoors in front of the fire.
It will brighten your day, boost your consumption of healthy and yummy seasonal flavours like pumpkin, gingerbread or eggnog, and it will not melt as fast as it does in summer.
Not bad, right? But, as some of the commonly used ingredients in store-bought ice creams are milk and sugar, a lot of people who follow a plant-based diet or avoid sugar do not consume it as much as they would like. Luckily for you, there is a vegan and sugar-free delicious ice cream recipe that you can prepare at the comfort of your own home.
You will fall in love with the flavour, believe us!
Coconut Ice Cream Recipe
With only a couple of affordable ingredients and a couple of simple steps, you can make your homemade vegan ice cream free of any added sugar or dairy. This is definitely one of the healthiest ice creams out there. Here are the needed ingredients:
2 cans of full-fat coconut milk, organic
4 large dates, pitted
A tsp of vanilla extract
A dash of cinnamon
A dash of sea salt
Preparation: Put the coconut milk cans in the fridge overnight to chill. Then, in the morning, in a blender, add all of the ingredients and blend for a minute or two on high speed. Once you get a homogeneous blend, run the mixture through an ice cream machine if you have one.
If not, put it into the fridge and wait until it is firm enough. Remember to remove it on an hourly basis to whisk it with a fork. Serve with a dash of cinnamon or pumpkin powder. Enjoy…
