Mouthwatering Vegetable Loaf with Balsamic Glaze (Vegan Recipes)

Vegetable Loaf with Balsamic Glaze Recipe

Here are the ingredients you will need:

2 tbsp of olive oil

A zucchini, diced

A red bell pepper, diced

A green bell pepper, diced

5 garlic cloves, mashed with salt

3 garlic cloves, mashed

½ tsp of red pepper flakes

Sea salt to taste

Black pepper to taste

A tbsp of ground flaxseed mixed with 3 tbsp of water (replacement for eggs), whisked

A tbsp of thyme, chopped

¼ cup of parsley, chopped

Dry lentils, one cup

Onion, chopped

2 cups of veggie broth

Gluten-free breadcrumbs, a cup

Vegan mozzarella, ½ a cup

¾ cup of tomato paste, gluten-free

¼ cup of balsamic vinegar, plus 2 tbsp

Preparation: Put the onion, garlic, lentils, and broth in a stock pot. Then, bring it to heat and once it boils, lower the heat and cover it. Simmer for 15 minutes. In the meantime, preheat the oven to 425 degrees Fahrenheit.

Then, in a pan, add the oil and bring it over high heat. Put the bell peppers, zucchini, garlic paste, and red pepper flakes. Add salt and pepper and cook around 5 minutes. Once the veggies soften, turn off the stove and put it aside.

Leave it to cool down.  Mix the flax egg and herbs in a bigger bowl and add the cooked stock pot content, the breadcrumbs, mozzarella, 1/2 cup of tomato paste, 2 tbsp of vinegar, and the cooled-down veggies. Mix and then gently press the blend into a 9×5-inch loaf pan.

Combine the remaining tomato paste, vinegar, and pepper flakes. Use the blend to brush the loaf. Put it into the oven and bake for 1 to 1 ¼ hours. Wait for 10 minutes before you slice it.
