Tasty & Healthy: Vegan & Gluten-Free Walnut Taco Meat

If you love eating tacos, you will definitely enjoy this gluten-free and vegan version whose meat is actually made from walnuts. Combined with tortillas and homemade salsa, it will satisfy the taste buds of even the pickiest of eaters.

Serve it on cabbage or lettuce or with some tortillas and you are good to go. You have a delicious vegan meal with a chunky texture and top-notch spiciness.

This is the ideal dinner for get-together with friends or a healthy lunch that the whole family can enjoy. If you are not the fan of spicy food, no worry, just remove the spicy ingredients!

Recipe for Walnut Taco Meat

For 2 to 4 servings, here is what you will need:

A cup of walnuts

A tbsp of olive oil

4 garlic cloves, minced

A tbsp of soy sauce or tamari

A tsp of oregano

A tsp of cumin

½ tsp of chilli powder

¼ tsp of salt

1/8 tsp of cayenne

A tbsp of ground cumin

A tbsp of chilli powder (optional)

1 to 2 tsp of nutritional yeast (optional)

¼ cup of water or more, as needed

For the garnish, you can opt for cilantro, tortillas, nachos, radish or avocados

Preparation: In food processor, place the walnuts and pulse them. Make sure you do not make a paste-like texture; bigger chunks are okay. Then, put them in a bowl. Next, in the processor, put the sea salt, garlic, chilli powder, oregano, soy sauce, olive oil, cumin, and yeast. Blend to get a smooth paste. Add water as necessary until you get a sauce in a pourable form.

Put the walnuts in the mixture and add salt. Combine with the garnish you choose. Any leftovers can be kept in the fridge up to a week or up to a month in the freezer. Enjoy!
