It is the ideal breakfast or dinner for vegans because the basis is not eggs, but chickpea flour. This tasty quiche is also suitable for those who follow non-dairy, gluten-free, grain-free or low-fat diets.
Within half an hour, you will get the perfect healthy meal which you can freely consume throughout the week. Cut it up into cubes or slices and put them in a suitable container. Reheat them in microwave or oven and voila, your breakfast or afternoon snack is ready!
Chickpea Flour Quiche Recipe
For 8 servings, you will need the following ingredients:
1 ¼ cups of chickpea flour
1 ½ cups of water
A tbsp of nutritional yeast
2 tbsp of fresh herbs
1 ½ tbsp of olive oil
A garlic clove, minced
½ pepper, diced
1/3 cup of onion, diced
Preparation: Preheat the oven to 500 degrees Fahrenheit. In the meantime, spray a muffin tin with cooking spray. Then, in a bowl, combine the flour, water, herbs, yeast, and a tbsp of oil.
In a sauté pan, add ½ tbsp of olive oil and garlic and add the diced veggies. Cook them for 5 minutes. Then, add them to the flour blend and mix everything together with the help of a whisk. Add the batter into the tins and put the tin into the oven.
Bake for 10 to 12 minutes. Then, open up the door of the oven and bake for additional 10 minutes like that. Then, remove it from the oven and turn it off. Serve and enjoy!

Do not worry if the batter looks thin- it will thicken up in the baking process.
