1 ½ cup of flour
1/3 cup of brown sugar + ¾ cup of brown sugar
A cup of applesauce or apple butter
½ cup of coconut oil or vegan butter
A tsp of cinnamon
1 ¾ tsp of baking powder
A tbsp of vanilla extract
½ cup of almond milk
2 apples, peeled and diced in small pieces

Preheat your oven to 350 degrees F and beat ¾ of sugar and butter until you get a creamy texture. Add the vanilla, milk, and apple butter and blend until it’s all smooth.
Mix the flour, baking powder, and cinnamon together and stir it into the butter.
Add the 1/3 cup of brown sugar and half of the chopped apples into the batter. Mix and transfer it into a loaf pan (9×5).
Sprinkle the remaining apples over the top and slightly press them into the batter.
Bake around 20 to 35 minutes. You can check out if it’s ready with a toothpick-if it comes out clean, take it out.
Wait to cool down a bit and then slice it.
Enjoy!
