DIY Turmeric & Coconut Soup
According to Clean Food House, here are the ingredients you need for the preparation:
A can of coconut cream
Two tsp of turmeric powder
A yellow onion, chopped
3 carrots, chopped
3 celery stalks, chopped
2 tsp of cumin
4 garlic cloves, minced
A tsp of smoked paprika
1/8 tsp of red pepper flakes
A cup of lentils
4 cups of homemade veggie broth
2 cups of spinach or kale
A tbsp of olive oil
How to make it: In a soup pot, pour the oil and bring it to heat. Add the onion and sauté it for 3 minutes. Then, add the celery and carrots and sauté until everything is soft. Next, add the garlic, spices,lentils, and broth. Reduce the heat and cook for half an hour. Towards the end,add the coconut cream and greens and mix. Turn off the heat.
Serve while warm. Any leftovers should be kept in the fridge.
