DIY Lentil & Turmeric Soup Recipe

You will need these ingredients:

3 cups of water

1.5 cups of coconut milk

A tsp of turmeric powder

1.5 tsp of cinnamon

2 cups of red lentils

A cup of chopped tomatoes

A tsp of coconut oil

A tsp of cumin

4 cardamom pods

An onion, diced

A garlic clove, minced

A tsp of sea salt

A pinch of black pepper

Preparation: Rinse the lentils with cold water thoroughly. Leave them to drain and while they are draining, in a pot over heat, melt the coconut oil and sauté the onions until they become soft and golden. Then, add the turmeric and garlic.

Cook for 2 more minutes and mix all the time. Add the water and turn on the heat to high.

When it starts to boil heavily, reduce the heat and add the lentils and cardamom. Cover the pot and simmer for 15 minutes. Now, it is time to add the tomatoes, coconut milk, cinnamon, cumin, and sea and pepper.

Cook until the lentils soften, usually between 10 and 20 minutes. If you want a smoother soup, simmer it for 60 minutes.

Serve warm.
